Festival Bean Soup

A deliciously different sweet bean soup!!!  Created especially for the Wakarusa Maple Syrup Festival*.

NEEDED TO COMPLETE:

3 C. - Water, beef, chicken or vegetable stock

1/2 lb. - Maple flavored Sausage, browned & drained

1 (16 oz.) can - Pizza Sauce                  1 (14 1/2 oz.) can - Petite Diced Tomatoes

1/4 C. - 100% Pure Maple Syrup        1 Tbl. - Brown Sugar 

Remove seasoning bag and set aside.  Rinse beans and place in a Dutch oven or large stock pot; cover with water.  Bring to a boil over high heat, reduce heat to low and cook for 1 hour.  Drain beans and discard water.

Place beans, 3 Cups water/stock, pizza sauce, tomatoes, brown sugar and contents from seasoning bag in Dutch oven.  Bring to a boil over high heat; cover, reduce heat and simmer 1 1/2 - 2 hours or until beans are tender.

Add Maple Syrup & Maple Sausage 10 minutes before serving.   Makes 5-6 servings.

Ingredients: Kidney beans, Northern white beans, vegetable flakes, onion, garlic, pepper and chili powder.
